8x10 safety negative photographed by Rosenfeld and Sons on July 25, 1938. Image of Jacob Ruppert Brewery open fermenting tanks in the Ale House, Building EE, at 92nd and East 93rd Streets between 2nd and 3rd Avenues. A mezzanine walkway was built close to the tops of the tanks for easy inspection and cleaning. Being sectional, they fit well between existing columns. This photo was taken to show off the new and modern equipment that was installed only a few years before. These tanks were installed to meet new governmental regulations, including ability to be frequently hosed down, a public thoroughfare intervene between brewing and bottling or racking plants, and that beer for bottling, which is subject to taxation, pass through Government measuring tanks. The older open fermenting tanks that remained in other part of the brewery look similar but were glass-lined and steel faced with tile.
