"With its electric ranges and cooks in their white jackets and toques, the Republic�s galley might be mistaken for a large urban restaurant kitchen. But these men worked in a moving world to serve thousands of meals, both elegant and basic, under conditions never faced in a restaurant." [Log of Mystic Seaport, Spring 2000, Volume 51, No. 4].
